When I was a young school-girl, my mother would often make muffins for us kids as we were getting ready for school. She would have them out of the oven and buttered by the time we made it to the dining room table. Hot, whole-grain muffins with melted butter were a heart-warming breakfast for us. I have personally never been very good at making muffins, so in honor of my mother, I decided to learn how to make them. For my first muffin recipe, I wanted something with whole wheat in it, and something vegan, so that my dear friends who are vegan could eat them. The following is my tweaked version of an old Mennonite recipe that was given to me by a dear friend years ago.
1 c whole wheat flour
1 c unbleached all-purpose flour
2 t baking powder
1/4 t baking soda
1/2 t cinnamon
1 t salt
3/4 c granulated sugar
1 T orange zest (grated orange peel)
2/3 c orange juice
1/2 c vegetable oil
2 X egg replacer, pre-mixed (I use Ener-G egg replacer)
1/2 c chopped walnuts
Pre-heat oven to 350 degrees Fahrenheit. Grease and flour muffin pan. Mix together in a medium-size bowl the flour, baking powder, baking soda, cinnamon, salt, sugar, walnuts, and orange zest. In a separate bowl, mix orange juice, vegetable oil, and egg replacer. Add the dry ingredients to the wet ingredients and mix just until combined. Do not beat. Spoon evenly into twelve muffin cups and bake for 25 minutes or until toothpick inserted in center of one of the muffins comes out clean. Turn the muffins out onto a bread board. To butter, slice almost all the way across the middle of the muffin with a bread knife and insert a slice of butter into the opening. Allow the muffin to close on the butter so the warmth melts it. Offer to Krsna, and then serve to your family. Makes 12.
